I notice you can't equip gear to your backpack does this mean we will only be aloud to bring one gear per Fight Night?

One gear. I had thought about putting gear in your backpack, but gear currently functions like weapons and armor, which you can not put in your backpack. This may be changed later, but certainly not before Fight Night tomorrow.
